Ginger Shrimp Salad

Ingredients:

    100g peeled and deveined shrimp
    About ½ inch piece fresh ginger peeled and grated
    1 clove minced garlic
    1 cucumber chopped about one inch squares
    1 tbsp apple cider vinegar
    2 tbsp lime juice
    pepper to taste

Directions:

Place cucumbers in a bowl and set aside. Saute shrimp on med-low or med heat with ginger, garlic, apple cider vinegar, and lime juice until pink. Take shrimp out of pan and place in bowl of other ingredients. Add 2 tbsp water to create deglazing sauce and simmer. Once reduced, add the extra sauce and refrigerate 30 min. Add pepper to taste.

I learned this bread from Book, my Atkins Diet Drill Sergeant about 4 years ago. It is perhaps more English Muffin than bread or bun tasting, but it is good tasting. It's tastes like a course ground wheat muffin, perfect for a sausage or egg. Book's Flax Bread: 1 TBS Butter 1 Large Egg 2 TBS Flax Meal (Golden Flax if possible) 1/2 tsp Baking Powder Soften butter. Mix all ingredients together. Microwave for 2 minutes. Makes 2 Servings. In this Induction-friendly recipe video, I demonstrate one of the most versatile side dishes or main dishes on the Low Carb lifestyle. From Chinese main meal or accompaniment to an Italian replacement for pasta, this faux rice recipe is versatile to say the least. Note: for the Italian alternative, I would eliminate the Chinese flavorings (Soy Sauce, meat, sesame oil, and egg) in favor of more garlic and Italian seasoning and spices. For Induction, you are limited to 1 cup of Cauliflower per day. This recipe was developed from the original at Linda's Low Carb recipe site. Here is my breakfast Low Carb cooking video where I make my favorite low carb pancake recipe. This isn’t Induction friendly due to the Baking mix, but you could substitute some almond flour to make it Extended Induction legal. (There is an understanding by some Dr. A said they (nuts) could be added after 14 days.) Here's the recipe: * 8oz pkg cream cheese * 3 eggs * 3 tsp Splenda or equivalent liquid Splenda * 1/4 cup Atkins Bake Mix *recipe below * 1/2 tsp baking powder * 1/2 tsp vanilla * 1/4 cup Heavy Cream or buttermilk Beat cream cheese with mixer until blended smooth. Add the remaining ingredients, and let sit for 5 minutes. Preheat non-stick pan to med/high heat. Spray pan with non stick spray and use 1/4 cup measure per pancake. Yield 10 pancakes.
