I learned this bread from Book, my Atkins Diet Drill Sergeant about 4 years ago. It is perhaps more English Muffin than bread or bun tasting, but it is good tasting. It’s tastes like a course ground wheat muffin, perfect for a sausage or egg. Book’s Flax Bread: 1 TBS Butter 1 Large Egg 2 TBS Flax Meal (Golden Flax if possible) 1/2 tsp Baking Powder Soften butter. Mix all ingredients together. Microwave for 2 minutes. Makes 2 Servings. In this Induction-friendly recipe video, I demonstrate one of the most versatile side dishes or main dishes on the Low Carb lifestyle. From Chinese main meal or accompaniment to an Italian replacement for pasta, this faux rice recipe is versatile to say the least. Note: for the Italian alternative, I would eliminate the Chinese flavorings (Soy Sauce, meat, sesame oil, and egg) in favor of more garlic and Italian seasoning and spices. For Induction, you are limited to 1 cup of Cauliflower per day. This recipe was developed from the original at Linda’s Low Carb recipe site. (genaw.com Here is the ingredients: 2 TBS Cooking oil 4 slices Bacon 1 Medium Size head of Cauliflower (~2 pounds), grated 2 cloves garlic, minced 4 oz of Ham 1/3 cup soy sauce 1 tsp sesame oil 1 egg, beaten 4 green onions, chopped Black Pepper to taste * Heat the oil and bacon in large skillet until bacon is slightly browned. * Grate Cauliflower in Food Processor * Add Cauliflower, Ham, and Garlic and cook until the cauliflower begins to stick (internal water is evaporated) and getting browned * Add Soy Sauce and Sesame Oil, heat for 1-2 minutes * Drag Cauliflower to half of the pan * Cook beaten egg until scrambled, and mix with Cauliflower mixture. * Add Green Onion, and Pepper to taste * Cook 4-5 more minutes Makes 6 servings Link to Linda’s Low Carb Update page: genaw.com Nutrition Info: 116 Calories; 5g Fat; 9.5g Protein; 9g Carbohydrate; 4g Dietary Fiber; 5g Net Carbs Per 1/8 recipe: 64 Calories

Here is my breakfast Low Carb cooking video where I make my favorite low carb pancake recipe. This isn’t Induction friendly due to the Baking mix, but you could substitute some almond flour to make it Extended Induction legal. (There is an understanding by some Dr. A said they (nuts) could be added after 14 days.) Here’s the recipe: * 8oz pkg cream cheese * 3 eggs * 3 tsp Splenda or equivalent liquid Splenda * 1/4 cup Atkins Bake Mix *recipe below * 1/2 tsp baking powder * 1/2 tsp vanilla * 1/4 cup Heavy Cream or buttermilk Beat cream cheese with mixer until blended smooth. Add the remaining ingredients, and let sit for 5 minutes. Preheat non-stick pan to med/high heat. Spray pan with non stick spray and use 1/4 cup measure per pancake. Yield 10 pancakes. For Pancake Syrup, I recommend Maple Grove Farms Sugar Free syrup ( bit.ly ) Nutrition Info: Total Calories 107, Fat: 10g, Carbs: 1.7g, Protein: 4g

Atkins Diet Recipe: Low Carb Eggplant Parmesan (IF)

In another recipe coming out of Jennifer Eloff’s awesome low carb cookbook, Splendid Low Carbing, I prepare a food that I probably would have swore I would never eat — eggplant. In just another one of those amazing things that low carb lifestyle brought to me, my taste buds have changed. I now like eggplant well enough to voluntarily eat it. Here’s a link to Jennifer’s website: www.low-carb.us Ingredients: 1 Medium Eggplant, thinly sliced 1 cup of grated parmesan 2 eggs 1 pound ground beef, browned 8 oz Sausage, browned 2 cloves garlic 1.5 cups of No Sugar Added Spaghetti Sauce 1 cup Mozzarella Cheese, shredded 1. Thinly slice eggplant, and put in egg wash. 2. Coat eggplant in Parmesan cheese 3. Heat oil in frying pan, and once hot, fry eggplant 1-2 minutes on each side until golden brown. 4. Brown ground beef and sausage. Once drained, add garlic and spaghetti sauce and heat for 5 minutes while finishing frying eggplant slices. 5. Layer the eggplant, meat mixture, and cheese to form 3 layers. Optional – dust top with excess Parmesan cheese. Bake at 350 for 25 minutes. Makes 6 servings: Nutrition info per serving: 456 Calories, 33g Fat, 9.3 Total Carbs ( minus 3.3g fiber), 30g Protein. (IF = Induction Friendly)

In this video, I demonstrate that good Italian is indeed possible on Atkins or a low carb diet. The unique ingredient in this Low Carb Chicken Broccoli Alfredo is the cream cheese in the sauce. As I mentioned in the video, there are lots of different options for to place the sauce on: — Spaghetti Squash (demonstrated in the video) — Dreamfield Pasta www.amazon.com — or one of my favorite, Riced Cauliflower. INGREDIENTS (Nutrition) * 1/2 cup butter * 1 (8 ounce) package cream cheese (low fat acceptable) * 1 teaspoons garlic powder * 1 clove garlic * 1 cup heavy cream * 1/2 cup water * 1/2 cup grated Parmesan Cheese * 3 ounces shredded Parmesan cheese * 1/8 teaspoon ground black pepper DIRECTIONS 1. Quarter the Spaghetti Squash, and place in pot to cook for 20 minutes. 2. Fry chicken breast in olive oil, season with salt, pepper, and Italian seasoning 3. Melt butter in a medium, non-stick saucepan over medium heat. Add cream cheese and garlic powder, stirring with wire whisk until smooth. Add water. Add cream, a little at a time, whisking to smooth out lumps. Stir in Parmesan and pepper. Remove from heat when sauce reaches desired consistency. Sauce will thicken rapidly, thin with additional cream if cooked too long. 4. Cook Broccoli. 5. Cut up chicken breasts and combine with broccoli and alfredo sauce. Serves 8+ people. Nutrition Facts: (based upon 8) Calories 470, 38g Fat, 3.7g Total Carbs (.8g Fiber), 28g Protein (IF = Induction Friendly)

I wanted to do a new low carb video to welcome in the new year. These were a big hit at all my holiday family functions even with my non-low carbing family members. Most never new they were eating low carb fudge. The original recipe can be found here: www.genaw.com 1/2 cup unsalted butter 1/2 cup Natural Peanut Butter 2 ounces softened cream cheese 1 cup Splenda 2/3 cup Vanilla Whey protein powder * Microwave the butter and peanut butter on HIGH for 1 minutes; mix thoroughly. * Mix in the cream chees * Add the Splenda and the whey protein powder until well combined. * Line a 8 x 8″ baking pan with nonstick foil. Spread the fudge and press out with another nonstick piece of foil or plastic wrap. * Chill for one hour. Makes around 20 pieces. Nutritional Info: Per Piece – 95.7 Calories, 8.55g of Fat (4g Sat), 3.5g of Protein, 2.3g Carbs (1.9g Net Carbs)
